Penne Arrabiata
Ingredients
1 500g Penne Pasta
1 Tin Peeled Chopped Plum Tomatoes
2 Tbs Olive Oil (For Tomato Sauce)
3 Clove of garlic (Finely Chopped)
3 Basil leaves
½ Onion Peeled and finely chopped
1 dried red chilli or 1 fresh red chilli halved de-seeded and finely chopped
Pinch of Salt and ground black Pepper
Good pinch of salt for pasta
Method
- First bring to boil a small pan of water with a good pinch of salt, the salt will make the water boil quicker.
- Add the Penne and give it a good stir so the pasta doesn’t stick.
- To make the tomato sauce, in a heavy based pan add the olive oil and 2 cloves of chopped garlic, (reserve the other clove for the pasta) and the chopped chilli. Add the onions and sweat for a few minutes until golden brown in colour.
- Add the tomatoes to the pan and stir to infuse the ingredients together, followed by the fresh basil and a small pinch of salt and black pepper. Keep stirring and leave to cook until it has come to the boil, then reduce to a simmer and cook for roughly 10 minutes or until the sauce has a firm consistency, don’t over reduce the sauce or it will be too thick.
- Add sauce to the pasta and toss together to coat pasta, check for seasoning and serve.
